Heath Bar Cake
1 German Chocolate Cake Mix
1 Jar of Caramel Syrup
1 Eight Ounce Container of Cool Whip
2 Heath Candy Bars
Prepare cake as directed. Bake at 350 degrees for 40 minutes. Take out of oven. Poke holes all over the cake. Pour caramel syrup over the cake. Let cool. Ice with Cool Whip. Sprinkle with Crushed Heath Bars over the top.
Enjoy!

Filled Rich Chocolate Cupcakes
Cupcake Batter:
3 c. all-purpose flour
2 c. sugar
2/3 c. cocoa
2 tsp. baking soda
1 tsp. salt
2 c. water
2/3 c vegetable oil
2 tbsp. vinegar
2 tsp. vanilla extract
Filling:
1 (8oz.) pkg. cream cheese, softened
1/3 c. sugar
1 egg
1/8 tsp. salt
1 c. semi-sweet chocolate chips or miniature chips
Preheat oven to 350 degrees.
Filling: In small mixing bowl, combine cream cheese, sugar, egg and salt; beat until smooth and creamy. Stir in chocolate chips. Set aside.
Batter: In a large mixer bowl, combine flour, sugar, cocoa, baking soda and salt. Add water, oil, vinegar and vanilla; beat on medium speed 2 minutes or until well combined. Fill paper lined muffin cups 2/3 full with batter.
Spoon 1 level tablespoon filling into center of each cupcake. Bake 20 to 25 minutes or until wooden pick comes out clean. Cool. About 2 1/2 dozen cupcakes.
Very good and moist! I kept them in a cool place because of the cream cheese mixture.

Sweet and Sour Chili
I made this for Life group last week and people were enjoying it!! This is a tried and true hit. It only serves about 4-5 people so I often make an additional half batch to serve a few more.
Saute these three together on med-high heat:
1 lb. ground beef or ground turkey
1/2 cup onion, chopped
1 clove minced garlic
Add and Mix:
1 cup water
6 oz. tomato paste
1/2 tsp salt
1/4 1 tsp pepper
1 tsp chili powder
1/2 tsp parsley
1 tsp sugar
1 1/2 T grated Parmesan cheese
2- 15 oz. cans Reads Three Bean Salad Mix (can be found at Kroger)
Simmer for about 30 minutes. Enjoy!

Italian Sausage Florentine
1 lb. Bob Evan's Italian Sausage
12 oz. egg noodles
10 oz. pkg. frozen chopped spinach, thawed
3-4 cloves garlic
3/4 - 1 c. Parmesan cheese
Cook egg noodles according to package directions. Add spinach in the last few minutes of cooking time. Meanwhile brown the sausage. Add garlic. After the sausage is browned add about 1/2 cup of the cheese. Drain the noodle and spinach mixture. Add sausage mixture to this. Add remaining cheese and stir. Serve immediately. Serves 6-8.

Avocado Chicken Pitas
Few ingredients, simple and very tasty!
4 whole pitas (I've also used flat breads)
2 tbs. olive oil
1 med. ripe avocado, peeled and pitted
1 tbs. lemon juice
1/4 tsp. salt
1/4 tsp. garlic powder
1/8 tsp. hot pepper sauce (optional)
3/4 lb. cook rotisserie chicken (skin removed),cut into strips (I've used the already cooked and cut chicken strips they make for salads and such. 1 box (6 oz. I think) does the trick. I like the Kirkwood chick. breast strips at Aldi the best :)
1 medium tomato, chopped
2 cups shredded Monterey Jack cheese
Brush one side of each pita bread with oil. Place on ungreased baking sheet and bake at 350 for 12-15 mins or until browned and crisp.

2 c biscuit/baking mix
2 t cinnamon
1 t nutmeg
2 eggs
1 1/2 c milk
6 T butter, melted
1 c chopped, peeled apple
In a large bowl, combine biscuit mix, cinnamon, nutmeg. Combine eggs and milk, stir into dry ingredients until smooth. Stir in butter and apple. Bake in a preheated waffle iron until golden brown.
Yield: 12 waffles

1 small onion, cut into thin strips
1/2 medium green pepper, cut into thin strips
1 t lime juice
1/2 t salt
1/2 t ground cumin
1/2 t chili powder
2 T olive oil
8 eggs, beaten
1 cup shredded Colby-Monterey Jack cheese
salsa and sour cream, optional
In a large ovenproof skillet, saute the chicken, onion, green pepper, lime juice, salt, cumin and chili powder in oil until chicken juices run clear.
Pour eggs over chicken mixture. Cover and cook over medium-low heat for 8-10 minutes or until eggs are nearly set. Uncover; broil 6 inches from the heat for 2-3 minutes or until eggs are set. Sprinkle with cheese. Cover and let stand for 1 minute or until cheese is melted. Serve with salsa and sour cream if desired.
Yield: 8 servings

Simple Sausage Lasagna
Again, from Taste of Home, but easy and quick! My husband says he would never want me to make it another way:)
1 lb. bulk pork sausage
1 jar (26 oz. spaghetti sauce)
1/2 c. water
2 eggs, beaten
1 carton (24 oz) cottage cheese
1/3 c. grated parmesan cheese
1 to 2 tbsp. dried parsley flakes
1/2 tsp each; garlic powder, pepper, dried basil, oregano
9 uncooked lasagna noodles
3 c. (12 oz.) shredded part-skim mozzarella cheese
In a large skillet, cook sausage over medium heat until no longer pink; drain.
Stir in spaghetti sauce and water.
Simmer, uncovered, for 10 minutes.
Meanwhile, in a large bowl, combine the eggs, cottage cheese, Parmesan cheese, parsley and seasonings.
Spread 1/2 cup meat sauce into a greased 13 x 9 in. x 2 in. baking dish.
Layer with three noodles and a third of the cheese mixture, meat sauce and mozzarella cheese.
Repeat layers twice.
Cover an bake at 375 for 45 minutes.
Uncover; bake 10 minutes longer or until noodles are tender.
Let stand 15 minutes before serving.
Yield: 12 servings.
Champion Chicken Puffs
This recipe is from Taste of Home magazine - easy and good
Prep/Total Time: 30 minutes
4 oz. cream cheese, softened
1/2 tsp. garlic powder
1/2 c. shredded cooked chicken (or canned chicken works too)
2 tubes (8 oz each) refrigerated crescent rolls
In a small bowl, beat cream cheese and garlic powder until smooth. Stir in chicken.
Unroll crescent dough; separate into 16 triangles. Cut each triangle in half, length-wise, forming two triangles.
Place 1 tsp. of chicken mixture in the center of each.
Fold each short side over filling; press sides to seal and roll up.
Place 1 in. apart on greased baking sheets.
Bake at 375 for 12-14 minutes or until golden brown.
Serve warm.
Yield: 32 appetizers.
Blueberry French Toast Casserole
This is a great, EASY recipe that's good for any meal. :)
1 loaf french bread
3 eggs
1 tsp. vanilla
3 T sugar
2 1/4 c. milk
1/4 c. butter
1/2 tsp. cinnamon
1/2 c. flour
6 T. brown sugar
1 c. blueberries (fresh or frozen)
Beat eggs, sugar, milk, and vanilla. Cut up french bread into one inch slices and put in greased 9x13 pan. Pour egg mixture over bread. Refrigerate overnight.
Preheat oven at 375 degrees. Mix flour, brown sugar, butter and cinnamon to a crumbly mixture. Sprinkle over top with with blueberries. Bake for 40 minutes.
Enjoy!

Yummy Chicken Salad
Boil 3-4 chicken breasts and cut up in small cubes.
Chop 1 to 1 1/2 cup of red grapes
1 1/2 cups mozzarella cheese
1 or 2 cucumbers, peeled and chopped
3/4 to 1 cup chopped almonds ( I use blanched)
Mix them all together-proportions can be done to your liking. Add poppy seed salad dressing to make moist but not soaking. Can be served in pitas, over lettuce, or alone. Enjoy!
Crunchy Romaine Salad
I'm not going to claim this as my recipe but I've had it and it's amazing... and I'm making it for Easter. YUMMY!
6 T. butter
1 1/2 c. chopped walnuts
2 pkg. Romen noodles (uncooked)
1 bunch broccoli
2 bunch green onions (chopped)
2 heads romaine lettuce
1 c. roasted, salted sunflower seeds
Dressing:
1 c. oil
3/4 - 1 c. sugar
1/2 c. balsamic vinegar
3 T. soy sauce
Heat oven to 350 degrees, melt butter in 13x9 dish. Crunch noodles. Add noodles and walnuts to melted butter. Stir often (every 2 mins.) until brown. Drain on paper towel. Mix in seeds. Add greens to bowl, top with dressing, then nuts just before serving.
Enjoy!

Mix all together. Serve warm or cold.

3. Cover. Cook on low 4-6 hours.
4. Ladle into bowls. Top with cheese, sour cream and chips.
